芹菜管半斤(也可用西芹代替)

去殼蟹肉1盒(約6個)

調味料

干貝醬1匙

鹽少許

米酒少許

挑除芹菜管葉子,再將芹菜管表面纖維剔除。

剔除芹菜管纖維時,可用手將芹菜管摺成一段段;每摺一段時,都有纖維相連,此時將纖維撕下來即可。不熟練以手除纖維者,也可用刨刀刨除表面纖維,但同時會刨掉部分嫩的芹菜管,較為可惜。

將蟹肉管放入水中洗淨,撈起瀝乾水備用。

洗蟹肉管時,注意是否有殘留的蟹殼,需一一挑除,以免不小心卡到喉嚨。

熱鍋,放入1匙油,加入蟹肉拌炒數下,倒入米酒再拌數下。

放入芹菜管,加入少許水拌炒均勻。

倒入干貝醬拌一拌,蓋鍋蓋燜約30秒,掀蓋加鹽調味即可起鍋。

芹菜管不要燜炒太久,否則會失去爽脆口感。

2. Heat the pan, add oil, and mix in the crab meat
3. Add rice wine, celery, then scallop sauce
4. Put the lid on and let it steam for 30 seconds. Be sure to not steam it for too long, or else the celery will become soggy
